1 lb chicken breast, chopped
1 tbsp almond flour or coconut flour (for light coating)
1 tbsp oil (avocado, olive, or coconut)
2 cloves garlic, minced
½ inch fresh ginger, minced
1 small onion, chopped
1 head broccoli, chopped
1 large bell pepper, chopped
Toss chopped chicken with almond or coconut flour to lightly coat.
Heat oil in a large skillet or wok over medium-high heat.
Add chicken and cook for 4–5 minutes until browned and cooked through.
Add garlic, ginger, and onion. Stir-fry for 1 minute until fragrant.
