It’s fluffy, light, and perfect for everything from grilled cheese to breakfast toast. One bite, and you’ll feel that childhood joy all over again—without the carbs.
1 egg
1 tbsp mayonnaise
1 tbsp almond flour
1 tbsp coconut flour
1/2 tsp baking powder
Pinch of salt
Optional: sprinkle of shredded mozzarella for extra textur
Preheat your mini waffle maker.
In a small bowl, mix egg, mayo, almond flour, coconut flour, baking powder, and salt until smooth.
If using cheese, sprinkle a bit directly onto the waffle maker before adding batter.
Pour half the batter into the waffle maker. Cook for about 3–4 minutes or until golden.
Repeat with the remaining batter.
Serve as sandwich bread, toast, or enjoy on its own!
