4 cups cauliflower rice (fresh or frozen)

1 tbsp olive oil

1 tbsp butter

1 large onion, thinly sliced

4 slices bacon, chopped

2 cloves garlic, minced

½ cup heavy cream

½ cup grated Parmesan cheese

Salt and black pepper to taste

Instructions

Caramelize the Onions: In a skillet over medium-low heat, heat olive oil and butter. Add onions and cook slowly, stirring often, for 20–25 minutes until deeply golden. Remove and set aside.

Cook the Bacon: In the same pan, cook bacon until crisp. Remove with a slotted spoon and drain on paper towels.

Build the Risotto: Add garlic to the pan and cook for 30 seconds. Stir in cauliflower rice and cook for 5–7 minutes, until tender.

Add heavy cream and Parmesan, stirring until creamy and thick. Fold in caramelized onions and bacon.

Season with salt and pepper to taste. Garnish with parsley if desired and serve warm.
