Low-Carb Broccoli Cheddar Soup

Creamy, cheesy, and loaded with tender broccoli and spice—this comforting soup keeps it low on carbs but big on flavor. Perfect for cozy nights or a quick meal that feels indulgent without the guilt.

Ingredients

2 tbsp butter

1 small onion, finely chopped

2 garlic cloves, minced

4 cups broccoli florets (fresh or frozen)

2 cups chicken or vegetable broth

1 cup heavy cream

1½ cups shredded sharp cheddar cheese

½ tsp salt (or to taste)

½ tsp coarse black pepper

½ tsp garlic powder

½ tsp onion powder

¼ tsp smoked paprika

Pinch of cayenne pepper (optional, for heat)

Instructions

Sauté the Base:

In a large pot, melt butter over medium heat.

Add onion and garlic; sauté until soft and fragrant, about 4–5 minutes.

Cook the Broccoli:

Add broccoli and broth. Bring to a boil, then reduce to a simmer.

Cover and cook 10–12 minutes until broccoli is tender.

Blend (Optional):

For a smoother texture, blend half the soup with an immersion blender or in batches.

Add the Cream & Cheese:

Stir in heavy cream, then gradually add cheddar cheese, stirring until melted and smooth.

Season with salt, pepper, garlic powder, onion powder, smoked paprika, and cayenne.

Serve Warm:

Garnish with extra cheddar or a sprinkle of paprika if desired.
