For the Cobbler Base:

1 cup almond flour

1/4 cup coconut flour

1/4 cup granulated erythritol or monk fruit sweetener

1 tsp baking powder

1/4 tsp xanthan gum (optional, for texture)

1/4 cup unsalted butter, melted

1/2 tsp vanilla extract

For the Cream Cheese Filling:

8 oz cream cheese, softened

1 large egg

2 tbsp granulated sweetener

1/2 tsp vanilla extract

For the Strawberry Layer:

2 cups fresh strawberries, sliced

1/4 cup granulated sweetener

Instructions

Preheat oven to 350°F (175°C). Grease a baking dish or 8×8 pan.

In a bowl, mix all cobbler base ingredients until a soft dough forms. Press into the bottom of the pan.

In another bowl, whip together cream cheese, egg, sweetener, and vanilla until smooth. Spread over the base layer.

Toss sliced strawberries with sweetener and spoon evenly over the cream cheese.

Bake for 25–30 minutes, until golden and set. Let cool slightly before serving.
