5 eggs, separated (whites and yolks)
6 tbsp coconut flour
3 tbsp full-fat coconut milk
1 tsp xanthan gum
1 tsp keto-friendly baking powder
1 pinch sea salt
1 tbsp melted coconut oil (plus extra for greasing)
Preheat oven to 350°F (175°C). Grease a loaf pan with coconut oil.
In a bowl, whisk the egg yolks, coconut flour, coconut milk, melted coconut oil, and collagen until smooth.
