For the Crust & Filling:

2½ cups almond flour

⅓ cup erythritol (or preferred keto sweetener)

2 tbsp coconut flour

¼ tsp salt

½ cup butter, melted

½ tsp vanilla extract

¾ cup sugar-free raspberry jam (or your favorite flavor)

For the Frosting:

⅔ cup Swerve Confectioners

23 tbsp heavy whipping cream

2 tsp keto sprinkles (optional, for fun)

Instructions

Preheat oven to 350°F (175°C). Line an 8×8 baking pan with parchment.

In a bowl, mix almond flour, erythritol, coconut flour, and salt. Stir in melted butter and vanilla until crumbly.

Press 2/3 of the mix into the pan to form a base.

Spread jam evenly over the base.

Crumble remaining dough on top, lightly pressing down.

Bake for 22–25 minutes or until golden. Cool completely.

For frosting, whisk Swerve with cream until smooth. Drizzle over bars and sprinkle with keto-friendly sprinkles.
