6 mozzarella sticks (200g), cut in half
1 large egg, beaten
½ cup (56g) almond flour
½ cup (45g) grated parmesan cheese
1–2 tbsp (7–14g) coconut flour
¼ tsp fine sea salt
¼ tsp garlic powder
2 tsp Italian seasoning
Freeze the cheese: Place halved mozzarella sticks on a tray and freeze for at least 1 hour until firm.
Prep coating: In one bowl, beat the egg. In another, mix almond flour, parmesan, coconut flour, salt, garlic powder, and Italian seasoning.
Coat sticks: Dip each frozen stick in egg, then dredge in flour mix. For extra crisp, repeat the coating process once more.
Freeze again: Place coated sticks back in the freezer for 30 minutes before cooking to prevent melting.
