Keto Energy Balls!

When life gets busy, I always reach for one of these little gems. I first made them for my daughter’s road trip—now they’re a family staple! Packed with healthy fats and protein, these Keto Energy Balls are bite-sized boosts of energy and joy. Keep a batch in your fridge, and you’ll always have something delicious (and guilt-free) within reach.

Ingredients

Scale

1/2 cup almond butter

1/4 cup coconut flour

2 tbsp chia seeds

2 tbsp ground flaxseed

1 tbsp cocoa powder (unsweetened)

2 tbsp sugar-free chocolate chips

12 tbsp erythritol or monk fruit sweetener

1/2 tsp vanilla extract

12 tbsp unsweetened almond milk (as needed for consistency)

Instructions

In a bowl, mix all ingredients until well combined.

Add almond milk slowly until mixture holds together.

Roll into 1-inch balls and place on a tray.

Refrigerate for 20–30 minutes until firm.

Store in an airtight container in the fridge for up to a week.
