Keto Egg Loaf

This recipe takes me back to quiet mornings at my grandma’s house—the scent of something warm baking, the feeling of comfort in every bite. Keto Egg Loaf is just that—soft, custardy, and filling. Whether topped with berries, butter, or cinnamon, it’s the perfect cozy breakfast or snack without the carb crash.

Ingredients

4 large eggs

4 oz cream cheese, softened

2 tbsp butter, melted

1/2 tsp cinnamon

1 tsp vanilla extract

Optional: 1–2 tbsp sweetener of choice (erythritol or monk fruit)

Instructions

Preheat oven to 350°F (175°C) and grease a small loaf pan.

In a blender or bowl, combine all ingredients until smooth.

Pour mixture into the prepared loaf pan.

Bake for 30–35 minutes or until set and lightly golden on top.

Let cool slightly before slicing. Serve warm or chilled!
