1 cup almond flour
1/4 cup vanilla whey protein powder
2 tsp ground cinnamon
1/2 tsp baking soda
1/4 tsp salt
2 large eggs
1/4 cup unsweetened almond milk
1/4 cup melted coconut oil
1/4 cup erythritol or monk fruit sweetener
1 tsp vanilla extract
Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
In a bowl, mix almond flour, protein powder, cinnamon, baking soda, and salt.
In another bowl, whisk eggs, almond milk, melted coconut oil, sweetener, and vanilla extract.
Combine wet and dry ingredients until smooth.
Divide batter into muffin tin (makes 6-8 muffins).
Bake for 18–20 minutes or until a toothpick comes out clean.
