Keto Chicken Cordon Bleu Meatballs

Tender chicken meatballs stuffed with savory ham and smothered in creamy Swiss sauce—each bite feels indulgent without breaking your keto goals. 1 lb ground chicken

⅓ cup blanched almond flour

½ tsp salt

½ tsp garlic powder

½ tsp onion powder

1 egg, lightly beaten

6 oz ham steak, cubed into 20 pieces

1 tbsp olive oil

1 tbsp butter

Sauce:
¾ cup chicken broth

1 tsp Dijon mustard

½ cup heavy cream

1 cup shredded Swiss cheese

Pinch cracked black pepper

2 tbsp minced fresh parsley (optional)

Instructions

In a bowl, mix ground chicken, almond flour, salt, garlic powder, onion powder, and egg.

Form into 20 meatballs, pressing a cube of ham into the center of each. Seal and roll.

Heat olive oil and butter in a skillet over medium heat. Brown meatballs on all sides, then remove and set aside.

In the same skillet, add broth and mustard. Simmer for 2 minutes. Stir in cream and Swiss cheese.

Return meatballs to the skillet, cover, and simmer for 10–12 minutes until cooked through.

Garnish with parsley and black pepper. Serve warm.
