2 cups cooked, shredded chicken

1 tbsp olive oil

2 cups chopped cauliflower florets

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

½ tsp Italian seasoning

Salt and pepper to taste

Optional: fresh parsley for garnish

Instructions

Preheat oven to 375°F (190°C).

In a skillet, heat olive oil over medium heat. Add cauliflower and sauté for 5–7 minutes until just tender. Add garlic and cook for 1 more minute.

Stir in heavy cream and Parmesan. Cook until sauce thickens, about 3–4 minutes.

Add chicken and Italian seasoning. Season with salt and pepper.

Transfer to a greased baking dish. Sprinkle mozzarella over the top.

Bake for 20–25 minutes until bubbly and golden. Let rest a few minutes before serving. Garnish with parsley if desired.
