4 boneless, skinless chicken thighs (or breasts, pounded thin)

4 mozzarella cheese sticks or 1 cup shredded mozzarella

8 slices of bacon

½ cup sugar-free BBQ sauce

Salt and pepper to taste

Optional: smoked paprika or garlic powder for extra flavor

Instructions

Preheat oven to 375°F (190°C) or heat your grill to medium-high.

Season chicken with salt, pepper, and any extra spices. Place a cheese stick or shredded cheese in the center and roll up tightly.

Wrap each chicken roll with 2 slices of bacon, securing with toothpicks if needed.

Place on a baking sheet or grill. Bake or grill for 25–30 minutes, turning once, until bacon is crispy and chicken is cooked through.
