• 2 cups non-fat Greek yogurt
• 2 large eggs
• ⅔ cup granulated sweetener (erythritol or preferred)
• ¼ cup all-purpose flour
• ¼ tsp salt
• 1 tsp vanilla extract
Prep Crust: Preheat oven to 325°F (160°C). Mix cookie crumbs, sweetener, and melted butter until combined. Press firmly into a greased 8-inch springform pan. Bake for 10 minutes, then let cool.
