Garlic Butter Shrimp with Zoodles

This dish is my go-to when I want something that feels fancy but takes barely any time. Juicy shrimp sautéed in a golden garlic-lemon butter sauce, twirled over fresh zucchini noodles—it’s light enough for summer but rich enough to feel indulgent. Whether it’s a solo dinner treat or a quick date night, this meal hits all the right notes.

Ingredients

1 lb shrimp, peeled and deveined

2 tbsp butter

3 garlic cloves, minced

Juice of 1 lemon

1/4 tsp red pepper flakes (optional)

34 medium zucchinis, spiralized

Salt & pepper to taste

Fresh parsley or parmesan for garnish (optional)

Instructions

Heat butter in a skillet over medium heat. Add garlic and cook for 30 seconds.

Add shrimp, season with salt, pepper, and red pepper flakes. Cook until pink (about 3–4 minutes).

Squeeze in lemon juice and toss to coat.

In a separate pan, lightly sauté zoodles for 1–2 minutes just until warmed.

Serve shrimp and sauce over zoodles. Garnish as desired.
