Creamy Tuscan Shrimp & Spinach (Slow Cooker Style)

This dish feels straight from a restaurant kitchen — rich, garlicky cream sauce, tender shrimp, wilted spinach, and sun-dried tomatoes all melting together in one dreamy bite. It’s low carb, slow cooker-friendly, and absolutely loaded with flavor. Serve it as is or over cauliflower mash for the ultimate indulgent yet guilt-free meal.

1.5 lbs raw shrimp, peeled and deveined

1 cup heavy cream

1/2 cup grated Parmesan

1/2 cup sun-dried tomatoes, sliced

3 cups fresh spinach

3 cloves garlic, minced

1/2 tsp Italian seasoning

Salt and pepper to taste

Optional: crushed red pepper flakes

Instructions

In the slow cooker, combine cream, garlic, sun-dried tomatoes, Italian seasoning, salt, and pepper.

Cook on LOW for 1.5 hours, then stir in spinach and shrimp.

Continue cooking on LOW for another 30–45 minutes, or until shrimp are pink and cooked through.

Stir in Parmesan until melted and smooth.

Serve in bowls or over cauliflower mash. Garnish with more Parmesan or red pepper flakes if desired.
