Cabbage Soup with Ground Beef

This cabbage soup is the definition of feel-good food. Loaded with tender cabbage, seasoned ground beef, and a rich tomato-beef broth, it’s warm, filling, and low-carb. It’s an easy one-pot meal perfect for meal prep, cold days, or when you want something nourishing and light.

Ingredients

1 tbsp olive oil

1 large onion, chopped

2 garlic cloves, roughly chopped

1 lb ground beef

1 tsp sea salt

½ tsp ground black pepper

1 (15 oz) can diced tomatoes

6 cups cabbage, shredded

1 bay leaf

½ tsp thyme

1 tsp oregano

1 tsp paprika

5 cups beef broth

Instructions

Sauté Base: In a large pot, heat olive oil over medium heat. Add onion and cook for 3 minutes until softened.

Add Garlic & Beef: Stir in garlic, then add ground beef, salt, and pepper. Cook until browned.

Add Remaining Ingredients: Stir in tomatoes, cabbage, bay leaf, thyme, oregano, paprika, and beef broth.

Simmer: Bring to a gentle boil, reduce heat, and simmer uncovered for 30 minutes.

Serve: Remove bay leaf before serving. Enjoy warm!
