Buffalo Chicken Stuffed Avocados

This no-cook meal is my secret weapon for hot days and hungry bellies. Spicy, shredded buffalo chicken piled high into creamy avocado halves, then finished with a drizzle of ranch or blue cheese—every bite is bold, satisfying, and full of healthy fats. It’s the perfect balance of heat and cool, and it comes together in minutes!

2 large ripe avocados, halved and pitted

1 1/2 cups cooked shredded chicken

1/4 cup buffalo wing sauce

1/4 cup blue cheese or ranch dressing (plus more for drizzle)

Optional: chopped green onions or celery for topping

Instructions

In a bowl, mix shredded chicken with buffalo sauce and dressing until well coated.

Scoop a bit of the avocado out to create more room for filling (optional) and mash it lightly.

Spoon the buffalo chicken mixture into each avocado half.

Drizzle with extra ranch or blue cheese and top with green onions or celery if desired.
