2 cups cooked, shredded chicken
1 large ripe avocado
1/4 cup finely diced red onion
Juice of 1 lime
2 tbsp chopped cilantro or parsley
Salt & pepper to taste
Romaine or butter lettuce leaves for wrapping
In a bowl, mash avocado with lime juice, salt, and pepper.
Stir in shredded chicken, red onion, and herbs.
Spoon mixture into lettuce leaves and serve immediately.
